ZERO WASTE VEGGIE CRISPS

Ingredients
  • Veggie peels
  • - potato
  • - carrot
  • - parsnip
  • - winter squash
  • - celery tops
  • - kale stems
  • - onion
  • - leeks
  • - apple
  • A drizzle of olive oil or coconut oil
  • Salt and pepper
Directions
  • Step 1 Preheat oven to 400 F.
  • Step 2 Separate the potato peels from the other veggies and toss with olive, salt and pepper.
  • Step 3 Spread in a single layer on a baking sheet. They can be overlapping, but not a pile.
  • Step 4 On a separate baking sheet, toss the remaining veggie peels with olive oil, salt and pepper. Again, spread in a single layer (they can be overlapping in this case, but not a pile).
  • Step 5 Bake for 10-20 minutes or until crispy enough to your liking.
  • Step 6 Use as toppings on soups or as a snack.
