Ingredients
  • I/2 head kale, romaine lettuce, or Swiss chard, sliced into very thin ribbons
  • 1 cup of thinly sliced purple cabbage
  • 4 mini cucumbers sliced
  • 1 package campari tomatoes or cherry heirloom tomatoes
  • MIX-INS
  • Avocado
  • Purple daikon or watermelon radish
  • 2 tablespoons hemp seeds
  • 1 tablespoon chia seeds
  • Roasted salmon or sautéed shrimp
  • 1 can garbanzo beans
  • Handful of cilantro, mint and/or microgreens
  • DRESSING
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons nutritional yeast
  • Salt and pepper
Directions
  • Step 1 To compose the salad: combine all of the ingredients in a bowl and toss.
  • Step 2 To make the dressing: whisk the vinegar and oil and drizzle over the greens. Season with salt and pepper. Add the nutritional yeast to taste and toss.
