Warming and oh-so-yummy on a cold February night ♥️

INGREDIENTS

1 cup black forbidden rice or arborio rice

2 tablespoons coconut palm sugar

pinch of salt

Optional: 1/2 tsp ground cinnamon and 1/4 tsp cardamom for a flavor and health boost

3 to 4 cups unsweetened almond milk

1/4 to 1/2 cup canned coconut milk (or unsweetened almond milk)

TOPPINGS

Blood orange slices

Mango, kiwi, dragon fruit

Cacao nibs

Coconut flakes

Plant-based yogurt

LET’S MAKE IT

In a saucepan, combine the rice, coconut palm sugar, cinnamon, cardamom, salt and 3.5 cups of the almond milk. Cook over medium-low heat, stirring, until the almond milk is absorbed. Gradually add more almond milk, if needed, 1/4 cup at a time, stirring and cooking until the sauce is very thick, 25 minutes. Stir in the remaining coconut or almond milk. Scoop into bowls and garnish with your favorite toppings.
