Ingredients
  • 8 oz canned tuna
  • 2 mini cucumbers, diced
  • 2 to 4 tablespoons vegan sour cream (you can sub with plain, non-dairy yogurt or vegan mayonnaise)
  • Juice of ½ to 1 lemon, start with ½ and add more to taste
  • 1 to 2 tablespoons Dijon mustard, start with 1 and add more to taste
  • ¼ cup fresh cilantro, roughly chopped
  • Himalayan salt
  • Freshly ground pepper
  • STIR-INS
  • Avocado
  • Basil
Directions
  • Step 1 Add the tuna and vegan sour cream to a bowl, and mix together with a fork. Add the lemon juice and mustard, and mix thoroughly. Add the cucumber, cilantro, and salt and pepper, mixing to combine. Adjust the seasonings and serve.
