Sweet Potato Toast

Ingredients
  • 2 sweet potatoes or Japanese sweet potatoes
  • Olive oil or coconut oil
  • TOPPINGS
  • - avocado
  • - fresh herbs like cilantro, basil or parsley
  • - greens like arugula or broccoli sprouts
  • - tomatoes
  • - radishes, thinly sliced
  • - fresh figs
  • - salt + freshly ground pepper
  • - smoked paprika
  • - ‘parmesan’ sprinkles or nutritional yeast
  • - nut cheese, feta, or goat cheese
  • - a fried egg
  • - lemon juice
  • - olive oil or hot pepper oil
Directions
  • Step 1 Preheat oven to 425 degrees F.
  • Step 2 Thinly slice the potatoes lengthwise and lay in a single layer on parchment-lined baking sheet.
  • Step 3 Brush each side with oil.
  • Step 4 Bake for 20 minutes or until golden brown.
  • Step 5 Garnish a couple of slices with the toppings suggested for the avocado toast, and save the rest for other meals. Store in fridge and reheat in the oven.
