Sweet Potato Toast

Ingredients
- 2 sweet potatoes or Japanese sweet potatoes
- Olive oil or coconut oil
- TOPPINGS
- - avocado
- - fresh herbs like cilantro, basil or parsley
- - greens like arugula or broccoli sprouts
- - tomatoes
- - radishes, thinly sliced
- - fresh figs
- - salt + freshly ground pepper
- - smoked paprika
- - ‘parmesan’ sprinkles or nutritional yeast
- - nut cheese, feta, or goat cheese
- - a fried egg
- - lemon juice
- - olive oil or hot pepper oil
Directions
- Step 1 Preheat oven to 425 degrees F.
- Step 2 Thinly slice the potatoes lengthwise and lay in a single layer on parchment-lined baking sheet.
- Step 3 Brush each side with oil.
- Step 4 Bake for 20 minutes or until golden brown.
- Step 5 Garnish a couple of slices with the toppings suggested for the avocado toast, and save the rest for other meals. Store in fridge and reheat in the oven.
