SPINACH + SHIITAKE BONE BROTH SOUP

Ingredients
  • 1 cup white jasmine rice
  • 8 cups bone broth or vegetable broth, divided
  • 1 (5 oz) package pre-sliced shiitake mushrooms (or 1 cup frozen)
  • 1 (5 oz) package of baby spinach, or 1 cup chopped frozen spinach
  • Squeeze lemon
  • Salt and pepper to taste
Directions
  • Step 1 In a small pot, add 2 cups bone broth and 1 cup jasmine rice. Bring to a boil and lower to a simmer. Cover with a tight fitting lid and cook for 10 minutes.
  • Step 2 Meanwhile, warm the remaining 6 cups of bone broth. Add the shiitakes and simmer. Season with salt and pepper to taste.
  • Step 3 Once the rice is cooked, add as much as you like, and as many handfuls of spinach as you like. Ladle into bowls and add a squeeze of lemon.
