Simple Green Breakfast Bowl

  • 2 handfuls fresh or sautéed greens
  • 1/2 avocado
  • Drizzle olive oil
  • Juice of 1/2 lemon
  • Smoked paprika or Aleppo pepper
  • 1 tablespoon hemp seeds
  • Salt + freshly ground pepper
  • 1 teaspoon butter, ghee, Earth Balance, coconut oil, or olive oil
  • 1-2 eggs, or tofu or tempeh, or 1/2 cup beans
  • Step 1 Place 2 handfuls of greens in a bowl and toss with olive oil + lemon juice. Slice half an avocado and place on greens.
  • Step 2 Heat the oil in a medium non-stick pan over low heat, about two minutes. Gently crack an egg and slowly add it to the pan
  • Step 3 repeat with the other egg. Cover with a tight lid and cook, interrupted, until the whites are completely set but still runny, 2 to 2 1/2 minutes. Slide the eggs gently onto the greens.
  • Step 4 Season eggs and avocado with salt, pepper, Aleppo and hemp seeds. For a heartier breakfast, serve with toast or sweet potato toast.
