RED LENTIL CURRY

Ingredients
- 3 cups red lentils
- 1 small onion, finely chopped
- 2 cloves garlic, finely chopped
- 1 tablespoon curry
- 1 teaspoon turmeric
- ½ teaspoon cinnamon
- 2 (15 oz) cans fire roasted tomatoes
- 1 ½ cups canned coconut milk
- 4 cups water
- TOPPINGS + SIDES
- fresh cilantro
- rice
- naan
- yogurt of your choice
Directions
- Step 1 Place all ingredients in the Instant Pot. Cook on high pressure for 10 minutes. Natural pressure release (meaning just let it sit) for 10 more minutes.
- Step 2 Serve over rice or with naan and garnish with cilantro.
