Ingredients
  • 3 cups red lentils
  • 1 small onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 tablespoon curry
  • 1 teaspoon turmeric
  • ½ teaspoon cinnamon
  • 2 (15 oz) cans fire roasted tomatoes
  • 1 ½ cups canned coconut milk
  • 4 cups water
  • TOPPINGS + SIDES
  • fresh cilantro
  • rice
  • naan
  • yogurt of your choice
Directions
  • Step 1 Place all ingredients in the Instant Pot. Cook on high pressure for 10 minutes. Natural pressure release (meaning just let it sit) for 10 more minutes.
  • Step 2 Serve over rice or with naan and garnish with cilantro.
