Ingredients
  • 4 Roma or a pint of Compari tomatoes, diced
  • 2 cloves garlic
  • 1⁄2 shallot or red onion, diced
  • 1⁄4 to 1⁄2 jalapeño, seeded and minced
  • A small handful of fresh cilantro, coarsely chopped
  • 1 tablespoon extra-virgin olive oil
  • Juice of 1 lime
  • Himalayan salt
Directions
  • Step 1 In a medium bowl, combine the tomatoes, garlic, onion, jalapeño, and cilantro, and toss with the oil, lime juice, and a pinch of salt.
