GRILLED APRICOTS WITH CASHEW CREAM + MINT

Ingredients
- 6 to 8 ripe apricots, sliced in half and pits removed
- 8 oz Kite Hill almond milk ricotta
- 1 tablespoon honey
- Fresh mint, sliced into ribbons
Directions
- Step 1 Heat a cast iron pan over medium high heat. Place the apricot halves on the pan, cut side down for 1 to 2 minutes or until they start to char.
- Step 2 Mix ricotta cheese with honey.
- Step 3 Scoop the mixture into the apricots, then top them with a drizzle of honey (optional), mint and blueberries
- Step 4 Apricots can be made ahead of time and can be kept in the fridge until ready to serve.
