FRESH FIG TAPAS

Ingredients
- 1 to 2 medium rainbow radish, peeled and sliced into 16 coins
- 1 (8 oz) container Kite Hill almond milk ricotta or 1 (6 oz) Treeline Peppercorn cashew-milk cheese, or full-fat goat cheese is a delicious dairy substitute
- 8 fresh figs, sliced in half from top to bottom
- Raw honey (liquid form)
- Micro-greens or fresh basil or mint, sliced into thin ribbons
- Optional: Add a sliver of prosciutto or Spanish jamon (ham) for the meat eaters out there!
Directions
- Step 1 Place each radish coin in an single layer on a large plate or food-safe platter.
- Step 2 Add a tablespoon of your favorite soft plant-based or dairy cheese and drizzle with a little honey.
- Step 3 Place one fig on top of the cheese and drizzle with a drop of honey.
- Step 4 Garnish with a micro-greens or fresh herbs.
- Step 5 Optional: add the prosciutto or jamon before the fig.
