Chickpea, Cucumber + Tomato Salad

Ingredients
- 2 (15.5 oz) cans chickpeas, drained and rinsed
- 4 mini cucumbers, halved lengthwise and sliced into half moons
- 12 oz heirloom cherry tomatoes
- A handful of fresh cilantro, coarsely chopped
- Juice of 1 lemon, more to taste
- A generous drizzle of extra-virgin olive oil
- Himalayan salt
- Freshly ground pepper
Directions
- Step 1 Toss all of the ingredients together. Season to taste.
