Chickpea, Cucumber + Tomato Salad

Ingredients
  • 2 (15.5 oz) cans chickpeas, drained and rinsed
  • 4 mini cucumbers, halved lengthwise and sliced into half moons
  • 12 oz heirloom cherry tomatoes
  • A handful of fresh cilantro, coarsely chopped
  • Juice of 1 lemon, more to taste
  • A generous drizzle of extra-virgin olive oil
  • Himalayan salt
  • Freshly ground pepper
Directions
  • Step 1 Toss all of the ingredients together. Season to taste.
