CAPRESE SALAD

Ingredients
  • 2 yellow heirloom tomatoes
  • 2 reddish heirloom tomatoes
  • 1/2 avocado, sliced
  • 1 container of Kite Hill Almond Milk Ricotta or 1 ball of Buffalo mozzarella
  • Extra-virgin olive oil
  • Micro-greens or basil
  • Optional: A thick balsamic or fig-balsamic vinegar
Directions
  • Step 1 Slice the tomatoes 1/4 inch thick and set aside.
  • Step 2 Fan the yellow tomatoes around the plate to create a circular shape.
  • Step 3 Add the ricotta or mozzarella in the middle.
  • Step 4 Place the red tomatoes on top of the cheese in a fan-like shape.
  • Step 5 Garnish with half the avocado, a drizzle of olive oil, and micro-greens or basil.
  • Step 6 Optional: Before adding the micro-greens, you could add a drizzle of balsamic. I like thick balsamic the best.
