CAPRESE SALAD

Ingredients
- 2 yellow heirloom tomatoes
- 2 reddish heirloom tomatoes
- 1/2 avocado, sliced
- 1 container of Kite Hill Almond Milk Ricotta or 1 ball of Buffalo mozzarella
- Extra-virgin olive oil
- Micro-greens or basil
- Optional: A thick balsamic or fig-balsamic vinegar
Directions
- Step 1 Slice the tomatoes 1/4 inch thick and set aside.
- Step 2 Fan the yellow tomatoes around the plate to create a circular shape.
- Step 3 Add the ricotta or mozzarella in the middle.
- Step 4 Place the red tomatoes on top of the cheese in a fan-like shape.
- Step 5 Garnish with half the avocado, a drizzle of olive oil, and micro-greens or basil.
- Step 6 Optional: Before adding the micro-greens, you could add a drizzle of balsamic. I like thick balsamic the best.
