Baked Avocado + Egg

Ingredients
  • 1 Avocado
  • 2 free-range, pastured eggs
  • 1 teaspoon fresh herbs, chopped
  • Freshly ground pepper
  • Himalayan salt
Directions
  • Step 1 Preheat oven to 400F.
  • Step 2 Slice the avocado in half, remove the pit and spoon out some of the flesh to make a larger hole for the eggs.
  • Step 3 Place the halves in a baking dish dish, crack an egg into the hole of each half, and bake for 15 minutes.
  • Step 4 Place the baked avocado on a plate, season with freshly ground black pepper, Himalayan salt, and garnish with basil, parsley or cilantro. Sprinkle with feta, goat cheese, or walnut ‘parmesan’.
